We take great care and attention to the details that weave our gastronomic proposal.  With the greatest awareness of how we are, to the ingredients we use, and how we transform them in the kitchen, taking care of the life and properties of each of the foods, to the combinations of the dishes, the drinks, and their functions; We care for how the products are raised and cultivated with awareness of the land, the climate, the historical context, and the well-being of our guests.  Our producers pride themselves on a conscious-way-of-living and the people and environments around them. We seek to offer a broader vision of consciousness on what we eat, through what we offer.

OUR PRODUCERS

Most of these producers work with regenerative agriculture (production of food by regenerating the soil and its nutrients), are small-scale producers and organic farmers – In the case of eggs and meats, free-range and hormone-free.

SPIRULINA VIVA
Spirulina Viva was founded in 2010 by Francisco Portillo and Katherine Kohlstedt, with the mission to cultivate the best fresh and 100% Mexican Spirulina. We are a small, artisanal farm, where we have clean air, the best quality water, abundant sunshine and friendly people. We are passionate about the fact that spirulina is a pre-Hispanic crop, with origins in Lake Texcoco, eaten by the Mexica people, and now we can bring it to Mexican families today. In Europe there are many artisanal spirulina farms like Spirulina Viva, but in Mexico, the birthplace of spirulina, 98% of the spirulina consumed in our country is still imported from China. In 2021 Spirulina Viva is made up of a team of 5 families whose health has been improved by consuming Spirulina Viva. We are located in the outskirts of San Miguel de Allende, where we harvest almost all year round, usually closing in the coldest months of January and February. In 11 years of eating Spirulina Viva we have also developed other ways of eating it - in snacks, ice cream, chocolate, freeze-dried bars. These are creative ways you can take it on the go when you're not at home to make your super smoothie.

Tía Mica is a registered trademark dedicated to the production and commercialization of 100% natural and handmade bee products. We are committed to the conservation and care of the bees, so we work hard in our apiaries to have healthy and well populated hives to produce products of the highest quality. Our bees have been cared for by a family lineage and harvest pollen in an unspoiled high mountain environment, full of wild medicinal plants. When it is mesquite flowering time, they are transported to more desert lands to collect their pollen and develop the delicious mesquite butter honey that characterizes us. We work with 3 seasons, 3 different honeys in the year, following the natural cycles of flowering in the field. This ensures that our honey is loaded with nutrients, minerals and properties.

We plant organically to ensure that there is absolutely no chemical residue in the product. We want a totally clean wheat. We believe it is important to take care of the environment as much as possible, so our planting and land use is not costly to nature in any way. We plant locally without requiring heavy investments and with the participation of poor communities. This is the best way according to the UN to ensure sufficient food production. STONE GRINDED With slow rotation in a stone mill, we keep all the nutrients of the wheat in the flour. That is, the starch, fiber and germ are milled together without heating, leaving the nutritious parts available to the consumer. In addition to keeping much advantage in nutritional value, we keep a sweeter and nuttier taste from the germ and bran, than normal flour. On a technical level, the particle in stone-milled flour has a larger surface area than the normal flour particle, which allows it to absorb more liquid. This results in breads with a softer and richer crumb. NO CHEMICAL ADDITIVES The flour is used as soon as it is milled, thus preventing it from being torn, resulting in bread that is fresher and easier to digest.

he takes them out of their little houses nicely arranged with buckets and sawdust, so they can roam free on his land and climb trees. He says it is a job that relaxes him, as he carries, hugs and talks to them. He is very proud of his hens and the beautiful eggs they lay. He is our egg supplier at Cartesiano Comedor 360.

DELICIAS DE MI TIERRA
Beatriz Calvario and her family have 7 hectares with organic and sustainable multicrops with a tremendous knowledge about the land, customs, history, crops and properties of each plant. She told us that these lands were fought for by her great-great-grandparents at the side of Emiliano Zapata and that is why they have cared for them so much through the generations, because they were not lands bought with money, but rather they cost the lives of their ancestors. They plant 3 grains of corn per hole because they have to think in abundance: one for the thief, one for the mouse and one for the boss. They are our main suppliers of vegetables and legumes in Cartesiano.

It is a project born out of concern for the environment, life and work in the field, as well as love for the dignified life of all animals. Hence the development and production of 100% real and handmade products. Our values are: love, science, humility, responsibility, empathy and gratitude. The idea originates in seeking a way to treat all species of the earth with dignity, as well as to help the planet heal. We sell free-range and certified organic beef, buffalo, wild boar, deer, chicken and pork. We do this because we owe it to the earth, because by being conscious of what we eat, we can help a whole virtuous circle.

PIEDRA COLORADA
Located in Tlahuapan, Puebla, this hatchery is a family society where they raise a few trout using the natural resources in a respectful way for the benefit of the whole community. The idea started because in ancient times, rainbow trout were produced in this area but access was limited to high society and they were denied entry to the town because of their appearance. Don Maurilio Sanchez wanted this to be enjoyed by all and opened it to the public without charging admission and without limitations. The water of the hatchery is spring water and the trout, in their first stage, develop in the same waterhole. They are kept at a low density so that they are healthy, are cared for with natural remedies and are fed carefully. They keep the place clean and well cared for. Most of the garbage that arrives is recycled, separated and sold. They make use of as much waste as possible and everyone takes care of everything on the farm. They do not use chemicals and cleaning is with lime.
